The Fair’s first in-house chef focuses on fresh…

Fried butter, deep-fried chocolate-covered bacon, fried snickers bars and…fresh berry tarts? This year fairgoers can choose to forgo the annual mild coronary blockage and focus on fresh, healthy food, compliments of Louise Mellor, the Orange County Fair’s first in-house chef.

Mellor has been helping with the Fair’s theme, creating contests and holding cooking demonstrations using fresh, seasonal foods – unchartered territory for the 120-year-old event.
